1. Heat a grill for direct medium heat.
2. Cut the peaches from north pole to south pole and down to the pit. Twist to separate the halves, and remove the pits. Scrape the grill clean and coat it with oil. Brush the cut sides and outsides of the peaches with the grapeseed oil and, using tongs, set them cut side down on the grill. Grill for 2 minutes, turn the peaches 90 degrees, and grill for 2 minutes more. Flip the fruit and grill for another minute. Remove the peaches from the grill.
3. For each plate, shingle 2 peach halves in the center. Fill the hollow centers of each peach half with 1 teaspoon pepper jelly and sprinkle with the cookie crumbs.
